Steamed scallion buns! Combine 1 cup warm milk (or light coconut milk) with 2tsp sugar, 1 tbls oil and 1/2 tsp active dry yeast and let sit until foamy. Mix with 3 cups AP flour to form a soft dough, adding more milk if needed. Knead dough until supple. Rest in a warm spot for 1 hour until it doubles in size. Punch down and make 12 small dough balls. Roll out balls to a 4" long oval. Cut 5 vertical slits in the middle being careful not to slice through the edge. Brush with oil, sprinkle with scallions and salt. Twist up from the ends and fold into a little tight spiral. Steam for 12 min over a medium flame, then shut off heat and continue to steam another 5 min. Enjoy with hot sauce or chili oil!
