File this under seriously weird but weirdly good.
Shredded rotisserie chicken, skillet-heated with a spoonful of red curry paste.
Sauteéd bok choy and asparagus chunks; red pepper flakes, garam masala, and turmeric thrown in with no foresight and reckless abandon.
Brown rice (microwaved from frozen--is that cheating?) stirred up with harissa.
Oh, and half an onion (nearly) caramelized (I got impatient) because it looked lonely in my fridge.
Finished with cilantro and a tuft of Greek yogurt because I knew if it tasted bad, the yogurt would cover it up a bit.
