Impromptu apple pancake...
3 chopped apples, 2 tbsp olive oil, small handful brown sugar, and 1 tbsp cinnamon in a cast iron pan at 400 degrees until bubbling.
Meanwhile, whisk 4 eggs, 3/4 cup flour, 4 tbsp sugar, 1 tsp cinnamon until blended. Pour over apples and bake for 15 min!

The batter baked on top of the Apple mixture. I definitely will try it again.

I just tried this and it was fantastic! Mine turned out a little eggy like flan- but it wasn't bad! I added honey on top as well. I have a feeling this will be a regular!!

Hi Tammy, sorry to hear that. The picture actually isn't upside down, it came out of the oven looking like that!
It's very puffy for only about 5 minutes but does flatten. I found it to be quite custardy rather than rubbery, but that could just be preference.
Maybe try playing around with the ratios, as this was an experiment I only put approximate quantities. Hope this helps! :)

Definitely doesn't look like the picture unless you turn it upside down. Pancake was very rubbery. How did you get the apples to rise above the pancake??
