Noodle bowl extravaganza! Our Partnerships Editor Samantha Weiss Hills boiled thin rice noodles, drained them, and placed a bunch of them over a bed of romaine lettuce. Then top them with sliced cucumber, pickled red onions, baked tofu, sunflower sprouts, fresh mint, and fried shallots. AND a sunny side up egg. Douse it all in a fish sauce/water/lime juice/hot chile mix -- then call it a night.
