Barley with tomatoes and avocado ?
Barley may take a while to cook (in salted water), 20-30 minutes depending on the kind, but follow the instructions.
While the barley is cooking, chop the cherry tomatoes and the avocado and let marinate with olive oil and a pinch of salt. I also added some onion (cipolla rossa di Tropea would be ideal). And herbs: basil and parsley to taste.
Once the barley is ready, combine all the ingredient and enjoy!
