Overnight oat yogurt parfait with apricots.
Stewed apricots: use fresh or dried, in a pan with a little water, honey, and a grating of nutmeg.
Layer on top of rolled oats (add a splash of milk first to the oats if your compote is dry), followed by 1 Tbsp chia seeds, homemade whole milk plain yogurt, a sprinkle of cinnamon, and a drizzle of maple syrup.
Let stand in the fridge overnight and it's ready to grab and go in the morning! Can make 3-4 days ahead, or 3-4 single serving batches to have ready for several days.
