Have you ever *whipped* the egg whites in your baked eggs? Our resident Genius Recipe hunter Kristen Miglore discovered this trick from Gourmet magazine via Orangette. It was delicious (no thanks to some creme fraiche and melty cheese on top, not pictured) but the whites deflated more than she would have liked. Any advice?

They might also be overbaked, but this poses the problem of getting the yolks cooked without overdoing the whites....
