I'm really enamored with long rises and almost no-knead bread to develop the flavor I'm longing for.

2.5 cups white flour
.5 cup whole wheat flour
1.5 cups leftover yogurt whey
.5 teaspoon dry yeast
1.5 teaspoons salt
2 teaspoons dried rosemary

Let rise slowly at room temperature (it's still chilly in my house, so it's under 60° most of the time) for two day, punching down every 12 hours or so. Bake at 450° in a ceramic loaf pan covered tightly with tin foil for 25 minutes, then another 10-15 minutes until the top is golden and it sounds hollow when tapped on the bottom.
