For real delicious PANCAKE that happens to be lactose and gluten free.
a) 75% Buckwheat flour 25% Teff flour (about 1 cup total), heaping Tbsp sweet rice flour, tsp baking powder, pinch salt, pinch baking soda, spoonful raw sugar:: whisk
b) about 1 cup soy milk; 1 egg; healthy glug vanilla; few Tbsp coconut oil, ~ tsp apple cider vinegar.: whisk
Stir a + b; Let batter sit a while. Thin with more soy milk if it's sludgy.
Fry in coconut oil.
??: Serve with rhubarb 'jam' (simmer cur rhubarb down with brown sugar & vanilla, dribble of water or fresh orange juice)
? make pancake and over the raw side sprinkle brown sugar and cocoa nibs. Flip and cook very briefly - until sugar caramelizes but doesn't scorch. Chewy crunchy chocolatey sticky good.
