Southwest breakfast skillet. Sauté cubed sweet potato (from 1 potato) in coconut oil until just about cooked. Add about 1 cup black beans, half cup #food52 slow roasted tomatoes, quarter cup roasted green chile sauce. Cook to warm through, then fold in baby kale or greens of your choice. Make two little wells and crack in eggs. Cook until egg whites set, 5-10 minutes.
