I decided to make breakfast burritos out of crepes. You can prepare crepes at home or use a trusted store-bought sort. Melt a knob of butter and heat left over slices of steak. Set aside and toss in some dill and lemon zest to infuse the butter. Beat some eggs seasoned with salt & scramble, leaving them a little runny. Toss a bunch of asparagus in olive oil, salt, & pepper and then prepare to fill the crepes. Start with a spoonful of egg, layer in slices of steak, and nestle in 3-4 asparagus spears per roll. Roll gently and set aside on a baking sheet. Bake for 10 minutes at 180c. Serve with a dollop of créme frâiche and chopped parsley.
