Greek Lamb
Olive oil
Oregano (Greek is preferable)
Rub lamb with above mix and coarse salt a few hours before cooking.
Baste every half an hour with above mix.
Cook for 4 to 6 hours depending on size.
Note that coals are under largest areas of meat - avoids burning in less meaty areas.

Note the cools are where the largest portions of meat are.
