Morcilla chorizo and butter bean stew. Roast a piece import belly and set aside once cooked Sweat 1cm diced shallots fennel celery and carrot with finely chopped garlic add capsicums and dried ancho chilli (soaked for 2 hours). Crumble in some morcilla (Spanish black pudding) and butter beans that have been soaked over night. Add some chicken stock and cook until the beans are soft. Fry off some sliced cooking chorizo and more morcilla and add to the pan. Blanch cabbage and place in the bottom of a bowl, add the chorizo stew and finish with a slice of pork belly and a piece of bread to mop the juices
