Stir Fry Lettuce Wraps
Summer has finally hit Toronto, and that means skirts, bare feet and fresh food! Lettuce wraps are the perfect idea for a summer nights dinner. My boyfriend and I had a long week at work and wanted something quick and simple for dinner, and this is what we came up with.
- 1/2 pound of beef cut into cubes
- package of frozen veggies
- 2 cups of rice
- half a lemon
- 1/2 cup of light beer
- curry powder
- iceberg lettuce leaves
You can use any type of protein. Beef was what we felt like tonight. Place the beef in a saucepan with some olive oil and brown. Once it has browned on the outside add the frozen vegetables to cook along with the beef. Once the vegetables are softened, add the juice of half a lemon, 1/2 cup of beer, dashes of curry powder, oregano, and cinnamon. Cook until beef is fully cooked.
Meanwhile, cook about 2 cups of rice of your choice.
Take a lettuce leaf, place rice first and add beef and vegetable mixture on top with a few slices of avocado. Feel free to add any condiments you wish! Wrap it up and take a nice big bite. It's messy, but totally worth it!
