A low key version of a classic MUMBAI street food. It's known as ragda patties. The patties being a simple mix of mashed potatoes and cornflour, spiced with salt and pan fried ( fancier versions may be stuffed with dried fruits and nutmeat). Paired with a semi puréed mix of rehydrated green or yellow peas, that are cooked down with a seasoning of mustard, curry leaves, ginger, green chile and a pinch of Garam masala. Normally this would be generously garnished with freaky diced onions, tomatoes and cilantro, but sheer bad planning restricted this particular session to just cilantro mint chutney and a sweet/sour tamarind date chutney.
