Roasted chicken with sour cream and herb rub. Take one cup sour cream mixed with a few crushed garlic cloves, generous amount of fresh dill & parsley, finely chopped shallots S&P. Cover spatchcock chicken inside and out, spread quartered and oiled potatoes around chicken and roast all together at 375F until skin is crispy and juices run clear about 1 to 1.5 hours.
