Parmesan & Rosemary Almond Crackers

1¼ cup blanched almond flour
⅛ teaspoon baking soda
* ½ cup grated Parmesan cheese
* 1-2 teaspoon fresh rosemary
1 tablespoon olive oil
1 large egg
salt & pepper
* approximately the amount. Just grated a small chunk of Parmigiano-Reggiano and plucked a small stem of rosemary from garden.
Blend all ingredients in food processor until dough forms. Roll out dough between to sheets of parchment paper. Cut desired shape crackers. May need to put into fridge or freezer to firm up if too soft. Transfer to parchment lined baking tray. Roll out leftover dough once again. Sprinkle top with a touch more salt. Bake 325 for 12-15 minutes. Enjoy!
