Sourdough pancakes! Take about 1.5 cups of your "fed" starter (i.e. It's left over from a fed starter that was used for a loaf, not your fridge starter), add some sugar (or not), an egg, pinch of salt and 1/2 tsp baking powder. Might need a couple tbsp flour if you want a thick batter. I added two.
