Roasted chicken with chorizo and orange.
Brown 8 bone-in chicken thighs in a dry pan over high heat while oven preheats to 375. Surround with sliced chorizo*, 6 medium yellow potatoes, 1 Spanish onion, whole garlic cloves from 1 head, and a sliced orange (or two!) Sprinkle liberally with salt and pepper. Fresh thyme sprigs would be nice, but I didn't have any and added a bit of dried thyme.
*dry-cured Spanish chorizo, not the mushy kind you mix with eggs
There is a recipe for this I've seen somewhere! This is my quickie version from what I remembered; it would probably work nicely with a spatchcocked bird, if you add all the underlings part-way through roasting. Or with small whole spring potatoes.
