Chicken and veggies in one pan! The chicken juices drip onto the veggies while the chicken comes out crispy and delicious. I Use a pan with a rack. Take chicken pieces and sprinkle with lemon juice, spice/herb blend of your choice (used Herbs de Provence, s&p) and set aside. Cut up potatoes and onions. Sprinkle with the same herbs & spices used on the chicken, add olive oil and mix. Place veggies in the bottom of the pan. Put rack on top and put the chicken on the rack. Drizzle chicken with olive oil. Bake 350 for app. 1 hour or until internal temp reaches 160. Let sit for 10 mins then eat!
