1 c oats + 2 c water cooked until almost absorbed, add 2 T chia seeds + 1/4 c non-dairy milk + cinnamon + ginger, turn off heat, let sit. Divide into two bowls, top with yogurt, blueberries, banana, pumpkin seeds, maple syrup and sea salt.
