Old-Fashioned Chocolate Buttermilk Cake
This is a deeply chocolatey, fluffy, and incredibly moist cake. Not too sweet either!
3 cups all purpose flour
2 1/2 cups granulated sugar
4 teaspoons baking soda
1/2 teaspoon salt
1 cup unsweetened cocoa powder
1 1/3 cups melted (liquid) coconut oil
1 1/2 cups buttermilk
3 large eggs
1 1/2 cups rich BLACK coffee, cooled
1 teaspoon vanilla extract
Make coffee, set aside to cool. Preheat oven to 350F. Grease two 9" pans.
Whisk dry ingredients: flour, sugar, baking soda, salt, & cocoa powder in a large bowl. Add in coconut oil, buttermilk, & eggs, stirring to combine. The batter will be dry and lumpy - that's okay. Slowly add coffee and then the vanilla. The batter should be plenty liquidy now.
Fill the cake pans about halfway. Bake about 40 minutes and allow to cool at least 30 minutes before turning the layers out. Enjoy!
