Roasted garlic Tortellini: kind of a crazy idea, but I thought I'd try stuffing fresh pasta with a roasted garlic clove. That's it. It's extremely sweet and mild, and would be even more so if you used elephant garlic. I cut the top off a head of garlic and drizzled it with olive oil, salt & pepper. Wrapped that in tin foil and roasted in a 425 oven until soft and sweet. We stuffed fresh pasta with these and had them with olive oil, Parmesan and herbs. Kind of transcendent. This would also be great in a broth with greens and white beans. #simpleitalianfood #dinner
