Watermelon salad:

Scoop watermelon into balls (I used an ice cream scooper).

Caramelize onions using a teaspoon of sugar and about half a cup of Balsamic vinegar for a large onion.

Serve with fresh mint and goat cheese.

Made a quick dressing of watermelon juice, minced garlic, olive oil, salt and pepper.
