Beef heart cooked like a steak. Seared in cast iron and basted with butter, garlic and rosemary and finished with a drizzle of aged balsamic and maldon salt.

This is my first time cooking beef heart but there's really not much to fear. It takes some trimming but once you cut off the fat and blood vessels it's just another piece of protein.

Looks delicious, sounds sketchy - bc: beef heart! ? How do you prep a heart for cooking? I have one in my freezer but keep pretending I don't see it bc I don't know what to do with it.
