Carnitas! 3lbs. of pork shoulder cut into 2 inch pieces. Rub pork with salt, pepper, cumin, and Aleppo pepper. Put meat in Dutch oven and add water half way up. Cover and slow roast in A 225 degree oven for 2 1/2 hours. Pickle thin slices red onion with kosher salt and lime juice, slice avocados, chop cilantro, slice radishes, crumble Cojita cheese, thinly slice lettuce. Char fresh corn tortillas over gas burner. Assemble tacos and enjoy with a squirt of lime juice, good weather, and an ice cold beer:)
