Delicate, large, thin, chewy, experimental success. I roasted sugar (2 c. evaporated cane juice) to dry-carmelize it. Then I got impatient and didn't wait for it to cool, so I allowed it to melt the cup of unsalted butter waiting in my mixer bowl.
Other ingredients: 2 eggs, beaten with ~2 Tbsp plain yogurt, ~2 tsp vanilla, 2 c. white whole wheat flour, 2 Tbsp ground flax seed, 2 Tbsp wheat germ, 2 Tbsp oat flour, 1 tsp baking soda, 1 tsp baking powder, 1/2 tsp kosher salt, and 2 sizes of chocolate chips (some of which melted in the heat)
It was a hideous, runny batter when I poured it onto full sheet pans and I was admittedly quite shocked when this deliciousness emerged from my oven!
