"Borscht" Definitely not traditional. No buttermilk. Place thinly sliced red cabbage in cold pot with cold butter. Sweat over low heat. Add diced pears(your choice. I used Bosc). Season as you go. Add red wine vinegar/toasted cumin/fennel seed/dill. Once blended and strained add some chilled-purified water. Re-season as needed. Whip heavy cream to medium-soft peaks. Season with salt-honey-barely mustard. Freeze. Chiffonade red cabbage-thin slice pear-add thyme and lemon verbena. Marinate in mixture of water vinegar bay leaf and honey. Chill. After that finely mince. Garnish with nasturtiums-white truffles
