Zaatar, garlic, lemon & mustard infused roasted baby chicken with carrots & potatoes
You need: 4 baby chickens / olive oil / Dijon mustard / mixed herbs of thyme & oregano / zaatar / garlic / lemon juice / salt & pepper / carrots, potatoes & onions
To make: in a bowl, mix the oil, mustard, herbs, zaatar, garlic, lemon juice & s&p. Rub this mixture on the chickens as well as under the skin and inside the cavity. Allow to marinate in the fridge for at least 2 hours. Preheat the oven at 200C, cut up the vegetables and place in a pan with olive oil & s&p. Push the vegetables to the side and place the marinate chickens & the juices in the middle. Roast for 1.5 hours & enjoy!
