Chicken & freekeh! The superfood grain that's so good for you and delicious!
You need: 2 cups freekeh, washed & drained / 2.5 cups chicken stock / small on in diced / 2 chickens cut into pieces / garlic salt / s&p
To make: preheat oven to 200C, season chicken with garlic salt, salt & pepper, put in a baking pan with olive oil and in the oven for 1.5 hours. Once chicken is almost cooked, get on with the freekeh.. In a pot over medium high heat, sauté onions in olive oil, then add freekeh and stir for 2 minutes. Add the chicken stock along with s&p, and once boiling, reduce heat to low until all water has been absorbed. Serve with chicken & plain yogurt & enjoy!
