Not the best photo since I was in a big hurry to jam it all in mah face. Brined, spatchcocked, and grilled chicken. I will never not spatchcock a chicken from now on. Grilled green garlic & breakfast radishes on the side.
I think the one we used was a young chicken, probably 5 lbs. I think you could do a bigger chicken but it might not be as tender and it would be more difficult to handle/flip on the grill. Look up the Serious Eats method for grilling a spatchcocked chicken. That's the method I used and it worked great!
