Whatever's in the fridge fried rice
Stir fry diced vegetables (I happened to have zucchini, green pepper, and peas), onion and garlic in coconut oil. Add whatever spices you want - I used dried basil, ground coriander, chile powder, and cumin. Add leftover rice. Move to one side, add a beaten egg and mix through. Turn off heat once egg is almost set. Serve with lots of cilantro and a squeeze of lime juice.
