Mid-week midnight snack alert: Smash any pre-boiled or roasted potato (EmilyC went with fingerlings, here) and slip them into a hot skillet of olive oil with a spoonful of smoked paprika swirled into it. After 3 to 5 minutes per side, they'll be crisp and delicious—whether you break out the homemade aioli or stick with straight up mayo and salt.
