Everyone has one - last minute nachos substituting as dinner "recipe": black beans warmed on stove in shallow cast iron, one layer of chips topped with grated cheese popped in
oven for a few minute on broil until cheese melted.
Add second layer of chips, cheese, red onion, and whatever else is available, broil until warmed, cheese melted, chips browned slightly and lightly on edges.
Sprinkle with chopped avocado, ripe chopped tomato, cilantro, etc. Nod to healthful eating: pico de gallo and fat free plain Greek yogurt.
