Garlic Chicken with an Orange Saffron Sauce and Chimichurri Relish
For Chicken-
6 boneless chicken thighs
1/4 cup olive oil
1 shallot, chopped
1 TBSP minced garlic
4 compari tomatoes, quartered
1 cup white wine
1 cup orange juice
1 small pinch saffron, about 8-10 threads
1/2 TSP turmeric
1/4 TSP coriander
Salt and pepper

For Chimichurri-
1/4 cup each; basil, cilantro, mint, oregano, thyme, & parsley. Minced
1 lime juiced
1 TBSP minced garlic
1/4 cup olive oil
2 TBSP red wine vinegar
Salt and pepper

For Chicken-
Season thighs with salt and pepper.
Heat olive oil iver medium/high heat in large pan and sauté chicken skin side down until golden brown. Flip chicken and add shallots and garlic. Continue to sauté until underside of chicken is golden brown.
Add tomatoes, wine, and orange juice and bring to a boil.
Reduce heat to medium/low and add spices.
Simmer until chicken is cooked through about 20 min.

For Chimichurri Relish-
Combine all ingredients and stir to combine.

Serve with flat bread or rice.
