Wild Oregon salmon (salt, pepper, pan-fried in olive oil, finished with a squeeze of lemon) over warm lentil salad (bacon, shallots, carrots, garlic, de Puy lentils, parsley, salt, pepper, plenty of sherry vinegar) and a simple butter lettuce salad with a mustard-y vinaigrette. Yum!
