Oven-baked kafta (kafta bil sinieh) with potatoes & tomatoes served with a side of cucumber & yogurt salad
You need: 500g lamb mince / small onion / small garlic clove / parsley / salt & pepper / tomatoes, potatoes (both sliced) / cucumber peeled & diced / plain yogurt / dried mint
To make: preheat oven at 200C, in a food processor, pulse the onion & garlic and place in a bowl, then pulse the parsley and put in the same bowl. Then add the lamb in the bowl and mix altogether by hand until well combined and season with s&p.
Prepare an oven proof dish with olive oil, put the lamb mixture at the bottom, top with potato slices & season with s&p. Then the tomato slices & season with s&p, and drizzle with olive oil. Place in the oven for 45 min or until potatoes are cooked.
To make the salad, in a bowl combine cucumber, yogurt & dried mint and season with salt to taste.
Serve together & enjoy!
