It's all about the croutons! I used to fuss about making homemade croutons, but my sister set me straight! I would painstakingly cut ciabatta into perfect little squares, sauté in olive oil and add salt and pepper..took too long and required me to clean up my stove afterwards. Now, I haul out my old and crusted cookie sheet, line it with parchment and add the ciabatta (cut less perfectly), toss the croutons in olive oil and salt and pepper and bake at 350 degrees Fahrenheit for about 20 minutes. Easy and crispy. I add them to so many things-in this case my dinner salad with blue cheese, garbanzo and kidney beans, butter lettuce, avocado and red cabbage., and a blue cheese vinaigrette. Throw the croutons on the top and it takes it to a yummy level. I usually munch on the rest of the croutons, so often times no leftovers!
