Contre filet with pont neuf potatoes. Seal the filet with salt and mignonet pepper, finish cooking in the oven (180•) Cut the potatoes (1 inch) fry at 190 degrees to cook, then at 225 for color. To make the sauce reduce 500ml of red wine to 50% and beef broth to 80%. Combine and reduce again to 50%. Serve hot.
