[salt baked branzino] whisk together egg whites and kosher salt until it feels like wet beach sand. stuff fish with lemon and rosemary. cover fish with salt paste and bake for 20 mins at 400°F. rest for 10 mins. crack open crust, fillet, and drizzle with olive oil.
