Noodle Kugel Cups
A sweet noodle kugel recipe baked in a muffin tin for individual servings. Great for brunch. Noodle kugel is sort of like bread pudding or quiche but with noodles.
1/2 lb wide egg noodles
1/2 stick melted unsalted butter
1 lb cottage cheese
2 cups sour cream
1/2 cup sugar, plus more for sprinkling
2 teaspoons cinnamon, plus more for sprinkling
1/2 cup yellow raisins
1 pinch nutmeg
Preheat oven to 350F. Boil the noodles in salted water for about 4 minutes. Combine all ingredients but noodles and butter in a large bowl. Mix the butter in and stir to combine. Add in the noodles. You will end up with a somewhat soupy mixture with noodles in it - that's okay. It will firm up while cooking. Grease the muffin tin and put about 1/4 cup of mixture in each muffin (make sure each one gets noodles and raisins). Sprinkle some cinnamon and sugar over the tips of each kugel cup. Bake 30-35 minutes, until tops are crispy and caramelized. Makes about 18-20 kugel cups or one 9x13 pan. Enjoy!
