Sauerkraut! Cauliflower and red cabbage (because pink is a more delicious flavour to eat). I used a 2% brine solution and let it sit for about three weeks. I'm pretty new to this (this is my third batch), so if you are thinking of trying it out you really don't need any fancy equipment. There is lots of info on-line as to "how" to DIY. Also, endurance is key! I found it hard to push through the first few days... I mean, cabbage smells at the best of times and it can be hard to trust that you aren't growing some kind of poisonous non-edible. But, the wait is worth it. This stuff is delicious.
