Roasted veggies with mozz di bufula & chocolate balsamic sauce
Toss roughly chopped veggies (all but avocado and arugula) with herbs, spices, and evoo. Roast at 375 for 20min or until fragrant, add in harissa and fresh mozz and return to oven for 5-10 min. Serve over arugula and drizzle with chocolate balsamic sauce (1 T unsweetened cocoa + 2-3 T balsamic vinegar). Enjoy!
