Creamy Fennel and Greens Soup??
Our CSA box had so many dark leafy greens as well as fennel and sweet onions. Makes a lovely soup.
Sauté onions and fennel in olive oil, season with sea salt. Add about a pound of mixed greens (collards, rainbow Swiss chard, turnip greens, escarole) vegetable stock, and a chopped up potato. Simmered until tender. Blend soup with some of the fennel fronds (reserving a few for garnish) until smooth. Serve with a swirl of cream, crème fraiche or non-dairy cashew or macadamia creme and reserved fennel fronds. Enjoy!
