This month has seen a disgraceful lack of cooking and budget keeping. Made a huge bowl of quinoa salad to make up for it. Lunches for days!
Sautéed shallot and mushrooms in bacon drippings and Worcestershire sauce. Added diagonal sliced asparagus for a hot second (so it stays crisp tender). Transferred to a bowl and added prepared brown mustard and s&p. Cooked quinoa in homemade chicken stock. Mixed this in with the sautéed veggies, fresh spinach, lemon grilled chicken breast from the deli, flax seeds, slivered almonds, and a little lime juice.
