Add olive oil to a skillet. When hot put in sliced cherry tomatoes for a few minutes with a sprinkle of salt and pepper. Push tomatoes to sides and cover with chopped fresh basil. Place slices of halloumi cheese in the middle. Serve on a bed of arugula and drizzle with balsamic vinegar.
