Pan-seared salmon with roasted radishes, potatoes and fennel. Toss sliced vegetables with olive oil, salt and pepper and roast on a sheet pan at 450 degrees for about 15 minutes (give the potatoes a 10 minute head start, for a total of 25 minutes.) Meanwhile, brown a half stick of butter in a skillet, and whisk in lemon juice, a bit of Dijon mustard and a dash of maple syrup. Pour over the roasted veggies and serve with seared salmon. #seafood #healthy
