A big bowl of vinegary AND creamy cole slaw to go with the 10 pounds of pork and lamb shoulder we have on the Big Green Egg. The cole slaw is a riff on one in Suzanne Goin's Sunday Suppers. You reduce red wine vinegar by half, whisk in honey, then pour the hot vinegar over green and red cabbage, shredded carrots, and thinly sliced red onion. Let sit for 15 minutes -- and at this point I like to drain off the accumulated liquid (which is essentially watered down vinegar), and then add apple cider vinegar, to taste, if you like tangy slaw. To finish, stir in mayo, lots of herbs, and salt and pepper, to taste. #memorialdayweekend #cookout #bbq
