Bacon & kimchi fried rice
Chop smoked bacon and cook, stirring, until some fat is rendered, and it is about to crisp. Add 1 finely chopped medium onion, 1 tsp minced garlic, 1 tsp minced ginger and cook for about 1 minute. Add about a cup of chopped kimchi (including liquid) and 2 cups pre-cooked cold rice. Stir-fry until kimchi is softened, then flatten rice down on the pan and reduce heat, let cook for 2-3 minutes until bottom is crispy. Stir in 2 Tbsp butter and 1 Tbsp gochujang.
