Slow roasting gets the most out of so-so cherry tomatoes. These ones are going on pizza.
Here's how: Halve cherry tomatoes and toss with a little bit of olive oil to coat lightly. Arrange cut-side-up on a roasting pan lined with foil—or if you want to be fancy you can use a wire rack. Sprinkle with salt (add a little sugar if you want extra sweetness) and roast at 275 F until jammy, 75-90 minutes.
